Overview

Parkwest Bicycle Casino is seeking a Sushi Chef who is creative, detail-oriented, and passionate about providing exceptional customer service.  Sushi Chef will be responsible for preparing and serving high-quality sushi and sashimi dishes to our customers.

Responsibilities

  • Expertly prepare sushi rolls, nigiri, sashimi, and other sushi dishes according to established recipes and standards
  • Filleting and Fish Handling: Proficiently fillet and portion different types of fish and seafood with precision and consistency.
  • Ensure that all ingredients used in sushi preparation are fresh, properly stored, and meet the highest quality standards
  • Assist in maintaining adequate stock levels of ingredients, tools, and equipment necessary for sushi preparation
  • Pay meticulous attention to detail when arranging and presenting sushi dishes to create an aesthetically pleasing dining experience.
  • Adhere to all food safety and sanitation guidelines, maintaining a clean and organized work area.
  • Collaborate effectively with other kitchen staff to ensure smooth operation and timely service during busy periods.
  • Stay updated with industry trends and advancements in sushi preparation techniques, and strives for personal and professional growth.
  • Must be available to work any shift including overtime when necessary.
  • Regular attendance, punctuality and essential key responsibilities for this job.
  • Be able to work as a team in a fast-paced environment.
  • Communicate effectively with others, reports incidents, hazards and problems to leads, supervisors, and/or managers.
  • Perform other duties as assigned.

Qualifications

  • Must be 21 years of age.
  • Must be able to pass mandatory screening which may include a background and credit check, and drug test.
  • Must be able to obtain and maintain a current California gambling establishment team member permit, badge or license.
  • Able to deal effectively and interact well with customers and co-workers.
  • Able to resolve problems/conflicts in a diplomatic and tactful manner.
  • Available for full time work varied shifts and flexible schedules. Which may include weekends and evening scheduling; and ready for all programs and activities. 
  • Bilingual a plus. Able to converse in English. 
  • Able to work independently.
  • Able to work within a team environment.

 

Education: Minimum of 2-3 years of experience working as a Sushi Chef in a professional kitchen environment and Apprenticeship from Culinary school; combination of education or experience also accepted.


Experience: Two-three years working as a Sushi Chef in a fast-paced environment and/or combination of education or experience. Extensive knowledge and expertise in filleting and preparing various types of fish and seafood, ensuring the highest quality standards required. Proficiency in creating a wide range of sushi dishes, including rolls, nigiri, and sashimi, with exceptional attention to detail. Strong knife skills and the ability to handle and prepare ingredients with precision and efficiency. Ability to contribute to menu development by creating innovative sushi dishes and exploring new flavors and ingredients.
