Overview

Parkwest Bicycle Casino is seeking a Hand-roll Chef (Wakiita) Sushi Hand-roll Chef who is creative, detail-oriented, and passionate about providing exceptional customer service.

Hand-roll Chef will prepare fresh, made-to-order hand rolls in a fast-paced, interactive dining environment.

Responsibilities

  1. Prepare and serve hand rolls made with premium ingredients, focusing on simplicity, freshness, flavor, while making sure the nori stays crispy.
  2. Engage with guests at the sushi bar, explaining the menu, taking orders, and providing a friendly and educational experience while preparing hand rolls in front of them.
  3. Ensure consistency in the preparation and presentation of each hand roll, adhering to established restaurant standards.
  4. Maintain the cleanliness and organization of the hand roll bar and workspace at all times, including tools and utensils.
  5. Monitor the freshness and quality of fish and other ingredients, ensuring all products meet high standards of quality and safety.
  6. Work efficiently to serve customers in a timely manner, especially during peak hours, without sacrificing quality.
  7. Collaborate with the kitchen staff and other chefs to ensure smooth operations and quick delivery of orders.
  8. Adhere to all food safety, hygiene, and sanitation protocols in compliance with local health regulations.
  9. Assist in restocking and maintaining ingredient inventory to ensure seamless service throughout shifts.
  10. Contribute to menu development by suggesting new hand roll combinations and seasonal specials.
  11. Perform other duties as assigned.

Qualifications

  • Food Handlers card required.
  • Must be able to pass mandatory screening which may include a background and credit check, and drug test.
  • Must be 21 years plus of age. Must be able to obtain and maintain a current California gambling establishment team member permit, badge or license.
  • Able to deal effectively and interact well with customers and co-workers.
  • Available to work any shift including weekends, holidays and overtime.
  • Able to converse in English.
  • Able to work independently.
  • Able to work within a team environment.
  • Must provide evidence of employment eligibility in the U.S.
  • Must be able to pass a mandatory drug test, criminal background and credit check.

Education: High school diploma or GED. Culinary arts education and training (preferred)


Experience: Two-three years previous experience in similar field of cuisine. Possess a thorough understanding of sushi techniques, including rice preparation, fish slicing, and working with seaweed (nori), is essential. Combination of education and experience also acceptable.
